  • Four skinless, boneless chicken breast halves (total weight: 1 to 1-1/4 pound)

  • Step1- In a mini chopper or food processor, finely chop the almonds. Add the paprika to the nuts in a shallow dish. In a separate shallow bowl, carefully whisk the egg whites.
  • Step 2- Sprinkle some salt and pepper on both sides of the chicken after patting it dry. Allow the extra egg to drip back into the plate after dipping each piece of chicken in it.
  • Step 3- The chicken should then be pressed into the nuts on both sides to coat them. To set the crust, place it on a baking sheet, cover it, and chill for at least 20 minutes.
  • Step 4-  Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). On a baking sheet, place the rack.

  • Step 6- Raise the heat to medium-high and place the chicken smooth-side down in the pan. Cook for 3 to 4 minutes on each side, turning once until the nuts are golden brown and set. 
  • Step 7- Cook for 20 minutes, or until an instant-read thermometer inserted into the chicken’s sides reads 160 degrees F.
  • Step 8- Mix the vinegar, salt, and pepper to taste in a medium mixing bowl. To create a smooth dressing: Drizzle in the remaining three tablespoons of olive oil in a steady stream, beginning with a few drops and working your way up. Toss in the salad leaves to evenly coat them with the dressing. Serve by dividing the salad among four dishes and topping it with the chicken.
